Munchy Monday: Veggie Quesadillas

There was a magical convergence of circumstances at lunchtime today – I remembered that today was my week to post a Munchy Monday blog 😉 and I also realized I was REALLY hungry. The resulting lunch was delicious! And so, so fast, only about 10 minutes from start to finish.
I use frozen veggies a lot these days because they are so convenient. I avoided them in the past because they get so mushy when you cook them. Now I just pour nearly boiling water over them to thaw them and they stay crisp – perfect for my favorite recipes.

Throw your veggies into a pan with a little butter and garlic (and whatever else you like!).

While the vegetables heat up, get another pan ready for your quesadilla. Warm one side of a tortilla, flip, and warm the other. Add your cheese.

I chopped my veggies when they were soft enough so the quesadillas wouldn’t be too lumpy.

Add your veggies on top of the cheese and tortilla. Add a little or a lot!

Add your other tortilla on top and flip your quesadilla over. I used a small plate to make sure the top and bottom stuck together.

It should only take a minute or so for the other side to brown.
