Munchy Monday: No Brainer Beef Roast

(vegetarians, avert your eyes!)

I got this recipe from a forum that I belong to. It’s SO easy. This recipe lets you take a cheap cut of meat, like round or chuck roast, and turn it into melt in your mouth roast beef with almost no effort.

Preheat oven to 485°F – let it sit at that heat for a little while (10-20 minutes) before you put the roast in.

~ 3 lb Beef Roast (works well with the cheaper cuts ie Eye of Round, Outside Round, etc)

Make a rub from 1 tsp each seasoning salt, pepper, garlic salt, onion powder, and enough olive oil to make it into a paste. Rub all over roast. (Or use any beef rub that you like – I just use Lawry’s Seasoned Salt)

Place in a glass dish just a bit bigger than the roast. Do NOT use your brand new Tastefully Simple stoneware that you never bothered to find out is only oven safe to 450°F. It will crack, and you will cry.)

Place pan in oven, and cook 7 minutes per lb of meat. Turn oven off, and leave door closed for 2 1/2 hours. Slice thinly and eat.
