Munchy Monday: Roasted Potatoes, Shallots, & Kale

I tried this recipe for dinner tonight, and I had to share it.  You hear a lot about kale these days, and with good reason.  Leafy greens is a challenging food group for many of us, but kale seems to fill the gaps nicely for many of us.  Very rich in vitamins A, C, K, and many other nutrients, kale is a healthy addition to any diet.  This recipe is basically roasted potatoes mixed with kale chips, garlic, and a little vinegar.  I didn’t have shallots on hand, so I used red onions.  I also used a little more vinegar than the recipe called for.  It was really delicious!  Click here for the recipe.
